An old fashioned is a test of restraint, so we keep ours simple and let the local pantry do the talking. Instead of plain sugar we sweeten with gula melaka, the palm sugar you find in every Peranakan kitchen, which brings a smoky-caramel depth that suits a good bourbon beautifully.
Three dashes of bitters — aromatic, orange and a touch of chocolate — tie it together. We stir it down cold over a single rock and express a wide ribbon of orange oil across the surface so you catch the perfume before the first sip.
