We wanted a spritz that tasted like the street outside rather than a Mediterranean postcard, so we built ours on calamansi — the little sour lime that grows on every five-foot way in this part of town — and a bitter aperitif we steep ourselves.
It lands light and gently bitter, with just enough sparkle to keep it lively from the first sip to the last. There is barely any alcohol in it, which makes it an honest choice for an early round or a designated driver who still wants something made with care.
Order it tall over plenty of ice with a twist of grapefruit, and let it carry you into the evening.
