Our namesake — a slow-stirred whisky drink with a whisper of woodsmoke.
The Lamplighter is the first drink we ever served behind this door, and it has barely changed since. We stir Japanese whisky with a measure of oloroso sherry until the chill comes up through the glass, then lift it with smoked maple and a few drops of bitters we char in-house over oak.
It arrives over a single hand-cut rock with a ribbon of lemon oil expressed across the top — so the first thing you meet is citrus and woodsmoke before the whisky settles in. We build it spirit-forward on purpose; it is meant to be sipped slowly while the room fills.
If you have never sat at our bar before, ask for this one. It tells you everything about how we like to make a drink: unhurried, balanced, and a little theatrical.
