There is no hiding behind a martini, so we treat ours with proper ceremony. We keep the gin in the freezer, chill the glass with crushed ice while we work, and stir — never shake — until the dilution is exactly right and the surface turns silk.
You choose the spirit, how dry you want it, and your garnish: a cold green olive, a wide lemon twist, or a pickled shallot if you are feeling savoury. A single dash of orange bitters rounds the whole thing without making it sweet.
It arrives so cold the glass frosts over before you reach it. Drink it quickly, while it is still at its best — that is the only rule.
