The highball is Japan’s great gift to the bar world: whisky, soda, ice, and absolute precision. We pour ours over a single long spear of ice that melts slowly, keeping the drink cold and the dilution gentle from start to finish.

We muddle a little fresh lychee and lime into the base before the long pour, which lends a soft, perfumed sweetness without tipping it into a fruit cup. The result is delicate, fizzy and almost weightless — the kind of drink you can have two of and feel none the worse.

It is our most-ordered drink on a Friday, and the easiest entry point if whisky usually feels too heavy for you.
