A paloma should be tart, salty and refreshing, and ours leans into all three. We split the base between a clean tequila blanco for backbone and a measure of mezcal for the smoke, then build it long over pink grapefruit, lime and a touch of agave.
The rim is a chilli salt we mix ourselves — enough warmth to wake the drink up without setting your mouth alight. Topped with soda, it stays bright and dangerously easy to drink on a warm Singapore night.
