Smoke & Salt Paloma

Mezcal, pink grapefruit and a chilli-salt rim with real smoke on the nose.

A paloma should be tart, salty and refreshing, and ours leans into all three. We split the base between a clean tequila blanco for backbone and a measure of mezcal for the smoke, then build it long over pink grapefruit, lime and a touch of agave.

The rim is a chilli salt we mix ourselves — enough warmth to wake the drink up without setting your mouth alight. Topped with soda, it stays bright and dangerously easy to drink on a warm Singapore night.

If you think you do not like mezcal, this is the drink we use to change your mind.
