Wok hei — the smoky “breath of the wok” — only happens over a roaring flame, and only lasts minutes. That’s why we never pre-cook and never hold food under a lamp. When you order ahead, we time the wok to your pickup or delivery, so your char kway teow arrives smoky, hot and exactly as it should be. 37 years, same flame, same wok.
