What’s actually in it
A slow ferment turns sweet tea into something alive. Here is what ends up in every raw, unpasteurised bottle.
Billions of live bacteria and yeasts from a slow, natural ferment — the working heart of every bottle.
Acetic and gluconic acids formed during fermentation give kombucha its bright, clean tang.
Antioxidant compounds carried over from the tea leaves we brew with.
Small amounts of B-group vitamins produced naturally as the culture works.
Active enzymes that form alongside the cultures during the long ferment.
The culture eats most of the sugar as it ferments, so most bottles finish under 5g per 100ml.

Most supermarket kombucha is brewed fast and pasteurised, which kills the very cultures you are drinking it for. We do the opposite: a long, slow ferment of at least fourteen days, a gentle second fermentation for natural fizz, and bottling raw so the culture stays alive. It takes longer and yields less — and it is exactly why a bottle of Boochly tastes the way it does.
