
These cookies came out of wanting something that tasted like home but didn’t need a trip to a specialty store. Pandan extract and desiccated coconut do the heavy lifting, and the dough is genuinely one-bowl.
Pull them while the centres still look slightly underdone — they firm up as they cool into that soft, chewy middle. The coconut toasts in the oven and adds a lovely nuttiness.
