In the cup

This is the slow corner of the menu. A barista weighs the dose, grinds it fresh, and pours filtered water in measured stages over four minutes — no machine, no shortcut. What you get is a translucent, tea-like cup with every note on display.

We rotate the bean weekly from the brew bar’s current single origins, so the same order can taste of blueberry one month and bergamot the next. We’ll walk you through whatever’s on, let you smell the grounds, and brew it the way that origin asks for.

It costs more and takes longer for a reason: this is coffee as a tasting, not a top-up. If you’ve only ever had coffee with milk, a good pour-over is the cup that changes your mind.
